Summer is just around the corner, so now’s the time to seek shareable recipes for treats that will refresh heat-weary clients. Most of us associate popsicles with childhood, but it’s the antiaging benefits that stand out in this modern version, offered at Lake Austin Spa Resort in Austin, Texas. Here, executive chef Stephane Beaucamp puts a healthful spin on a summertime classic with ingredients—leafy green kale, blueberries and pomegranate juice—that deliver a hefty dose of age-fighting nutrients.

“I love these popsicles because they’re so simple to make and so nourishing for your body,” says Beaucamp, who created the recipe with the intent of blending great flavor with “purposeful” ingredients. The blueberries and pomegranate juice are stocked with glow-enhancing beta carotene, as well as vitamin C, which helps build skin-plumping collagen, while the kale’s vitamin K and calcium work to strengthen bones and reduce the appearance of wrinkles.

Beaucamp reports that the popsicles are popular with guests as poolside treats on a sunny day, and that folks are generally surprised to learn that within the sweetly tart snacks lies a powerhouse vegetable. “Everyone adds green veggies to their smoothies,” he reasons, “and this is just another example of how to pack more fruits and vegetables into your day.” How’s that for a cool idea?
