Taste: Glowing Green Smoothie

green-smoothie-recipe[Image: Courtesy of Lindsay Moe]One day while tinkering in her kitchen, nutritionist, co-author of Radical Beauty (Harmony, 2016) and founder of the Beauty Detox series Kimberly Snyder  came up with the base for what she now calls the Glowing Green Smoothie. This delicious blend features 70 percent greens and the rest fruits. Incorporating a citrus component is essential, says the author: “Lemon is very cleansing and helps rebuild the liver, plus it contains lots of vitamin C. And because of the drink’s high level of antioxidants, your skin will really thank you by taking on a vibrant, healthy, natural glow,” she explains. For more sweetness, you can add pure stevia, which doesn’t affect blood sugar. Best of all, this full-of-fiber recipe uses all edible produce parts, right down to the stems!

Glowing Green Smoothie Recipe

Makes about 4 servings

7 cups chopped spinach (about a medium bunch)

6 cups chopped romaine lettuce (about 1 small head)

2 cups cold filtered water

1 1/2 cups chopped celery (about 2 medium stalks)

1 medium apple, cored and coarsely chopped

1 medium pear, cored and coarsely chopped

1 medium banana, peeled and cut in thirds

2 Tbsp. freshly squeezed lemon juice

1/2 cup minced fresh cilantro (optional)

1/2 cup minced fresh parsley (optional)

ice, to taste (optional)

Combine spinach, lettuce and water in a blender and begin processing on low. Gradually move to higher speeds and blend until smooth. Add celery, apple and pear, and the cilantro and parsley (if using). Finally, add banana, lemon juice and ice (if using), and blend until smooth. Serve immediately or refrigerate, covered, for up to three days.
