Spa RECIPES: Blueberry White Pine Infused Water from Skaná Spa

Refreshing, flavorful and chock-full of antioxidants!

This blueberry- and white pine-infused concoction from Skaná Spa at the Turning Stone Resort and Casino in Verona’s Oneida County, New York, has us thirsting for more! Chef Mike Tubia whips up the tasty water for Skaná’s guests, tailoring it to honor the traditions of the Oneida Indian Nation. To that end, Tubia primarily includes ingredients that are seasonally abundant, a practice also referred to as “eating the seasons.” Blueberries and maple syrup are traditionally harvested in the spring, and the white pine, a symbol of the Oneida Nation, lends the drink a fragrant, herb-y embellishment. During the steeping process, the pine fills the room with the scent of “fresh Christmas tree,” says Tubia. He then strains the mixture through a coffee filter, “so the water is crystal-clear but has that blue tinge from the blueberries.” The pine’s flavor adds depth to the drink, layering on “another element to entice the taste buds.” Served in a glass with whole blueberries and garnished with white pine branches, this signature Skaná specialty is a standout.

Though other varieties of infused waters are available seasonally—such as Orange Cinnamon and Cranberry Sage—Chef Tubia’s true favorite is “definitely” the Blueberry White Pine. He’s not the only fan; Skaná Spa-goers can’t seem to get enough. “Based on the amount we produce for the spa [up to ten gallons a week!] it’s going over really well,” Tubia reports.

Blueberry White Pine Infused Water

½ lb. fresh blueberries
1.5 gal. water
3 white pine needles
1 tbsp. maple syrup

Puree blueberries in a blender until smooth. Mix with water, pine needles and maple syrup. Bring to a boil, then remove from heat. Allow to steep for one hour. Pass through fine mesh strainer. Chill and serve.
